Sweet Tooth: Cookie Recipes

Happy Monday,

I hope you are all having a fantastic day. I was so looking forward to today and getting the day off  from work.  So far it has been nothing but a lazy day. I had lunch with my nieces at the park this afternoon and I was so tired chasing after those two goofballs. 

I have been so busy the last couple of days repainting the house and scavenging for decor. I must say this is the most fun part. Thank god for Pinterest I got to pin lot's of things that I adore. 


Even with all this going on, I still found time to unwind and admire the work I have done so far, while I devoured these sweet treats.  For all you, who enjoy baking you're gonna like this one.

French Butter Cookies -Martha Stewart



Ingredients:


  • 1 cup (2 sticks) unsalted butter, room temperature
  • 2/3 cup packed light-brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 1/2 cups sifted all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup granulated sugar

Directions:

Combine butter and light-brown sugar in a medium size bowl; beat on high speed until fluffy, 2 to 3 minutes. Add egg and vanilla, and mix to combine. Add flour and salt, and mix on low speed until flour is incorporated.

Roll dough into three 1 1/2-inch-diameter logs. Wrap in plastic wrap, and refrigerate until firm, at least 1 hour or overnight

Heat oven to 350 degrees. Line baking sheet with parchment paper . Roll cookie log in sugar, coating it evenly, and slice into 1/4-inch rounds. Place cookies on baking sheet about 1 inch apart. Bake until golden brown, 15 to 20 minutes. Remove from oven, and let cool completely on wire racks.

 Sugar Cookie Thins-Taste of Home-


Ingredients:

1 cup butter- softened-
2 cups sugar
2 eggs
1 teaspoon vanilla extract
5 cups all-purpose flour
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup milk

Directions:

In a large bowl, cream butter and sugar until light and fluffy. 

Add eggs and vanilla. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with milk. 

Cover and refrigerate for 15-30 minutes or until easy to handle.

On a floured surface, roll out dough to 1/8-in. thickness. Cut out cookies into desired shapes. Place 2 inches apart on greased baking sheets. Sprinkle sugar on top.



Bake at 350° for 10 minutes or until edges are lightly browned. Remove from pans to wire racks to cool completely. 


These are perfect with tea or coffee...add guava jelly and bon appetit!!
